O.k. Guys, these Char-buffed Chicken Wings were actually created by accident. Usually the term “accident” is never good in our kitchen, but not this time. I made Shrimp Tacos with Chipotle Cream the other day and my husband said the spices on the shrimp reminded him of the Char-buffed Chicken Wings from Oscar’s, one of the famous family friendly sport bars in our city. They have pizza and other things but my favorite is their char-buffed wings.
What do Char-buffed Chicken Wings taste like?
They are smoky, spicy, a little garlicky and a little salty. They’re not the typical wings that usually come with some kind of sauce, although you can dip them after you grill them in your favorite hot sauce. But I like it as is, as I call “naked”. My favorite part is the skin. Delish! I seriously don’t know how they make them at Oscar’s, but I know they use some sort of dry rub and grill to give them the charred appearance and smoky flavor. Yummm! So when he said that, it sparked the craving for chicken wings in my brain, which usually doesn’t take much because I LOVE chicken wings. I have a few recipes on my blog. Fried Chicken Wings in Sticky Honey Soy Garlic Sauce
Here are my non-secret ingredients for the rub. I got salt, cumin, cayenne, garlic powder, paprika and chili powder. Don’t mind the oil in the back, it’s just here to hang out and to remind you to use it to brush the grill. Minus the oil, mix all the spices in a large bowl. This is your dry rub yummy concoction.
Put the wings in the bowl, stir and mix until all wings are very well coated.
Let’s cook some food!
Heat up the grill to medium heat (about 350º F on a gas grill). Brush the grill with some oil and place the chicken wings in a single layer.
Use tongs to turn them every so often so the meat cooks evenly. You can also move the smaller pieces up to the higher section of the grill after they are done while waiting for the larger pieces to be cooked (to keep them warm but not overcooked).
Grill them for about 20-25 minutes. You can test it by cutting into one. If the juice runs out clear, that means they are done.
Garnish with some cilantro leaves (optional). Enjoy!
