Grilled Cheese with Caramelized Onions

This is not just any grilled cheese, it’s Grilled Cheese with Caramelized Onions. I served it with the Roasted Tomato Soup. They were the perfect combination. The bread used in the Grilled Cheese with Caramelized Onions was my homemade Dutch Oven Bread.

I love the fact that everything including the bread was homemade. It was a proud moment when I can say “I made everything by myself!”. There’s no preservatives. Everything was fresh and I know exactly what’s in it. It gives me a good feeling that I’m feeding us good homemade meals. 🙂

I got the recipe from Dinner at Tiffani’s. I love her show because I can relate to how she cooks. I’m not a trained chef, just someone who religiously watches cooking shows and I love food.

Let’s cook some food!

Start with caramelized onions. Heat the canola oil and 1 tablespoon butter in a large saute pan over medium heat.

When the butter is melted, add the onions.

Stirring occasionally, until dark brown and caramelized, about 25 minutes.

Add the balsamic vinegar.

Add sugar and 2 tablespoons water, scrapping up any dark bits that have accumulated on the bottom of the pan.

Continue to cook until all the liquid has evaporated.

Butter 1 side of each bread slice. Use good bread such as Italian crusty bread. I used my fresh homemade Dutch Oven Bread.

Lay slices butter-side down on a work surface. Top each with 1 slice (or 2 slices) of Gruyere (or Swiss cheese). I used Swiss.

Lay a dollop of the onions and 1 (or 2) more of cheese.

Top with another slice of bread, butter-side up.

Heat a pan over medium heat. Add the sandwiches and cook until the cheese begins to melt and the bread is golden brown, 2 to 4 minutes. I used cast iron pan. I’ve been using it so often to make sandwiches, and grilling. Before I got a cast iron pan, I used regular non-stick pan and it was fine.

I used the Panini press to press the sandwiches down. If you don’t have it, just use a large pan and weigh it down with some large can food. It will be fine.

Flip and continue to cook until golden brown and the cheese is melted through, 2 to 4 minutes.

Here’s my old picture when I didn’t have the cast iron pan. They were completely fine and delicious.

Cut in half and serve immediately.

They are great by themselves or serve them with some Roasted Tomato Soup.

Ingredients
  • 2 tablespoons canola oil
  • 4 tablespoons unsalted butter, softened
  • 2 large onions, sliced
  • 2 teaspoons balsamic vinegar
  • 1 teaspoon sugar
  • 1 tablespoon water
  • 12 slices rustic Italian bread (each about ½-inch thick)
  • 8 ounces Gruyere (or Swiss cheese), thinly sliced
Instructions
  1. Heat the canola oil and 1 tablespoon butter in a large saute pan over medium heat. When the butter is melted, add the onions and cook, stirring occasionally, until dark brown and caramelized, about 25 minutes.
  2. Add the balsamic vinegar, sugar and 2 tablespoons water, scrapping up any dark bits that have accumulated on the bottom of the pan. Continue to cook until all the liquid has evaporated.
  3. Butter 1 side of each bread slice. Lay 6 slices butter-side down on a work surface. Top each with 2 slices of cheese, a dollop of the onions and 2 more slices of cheese. Top with another slice of bread, butter-side up.
  4. Heat a pan over medium heat. Add the sandwiches and cook until the cheese begins to melt and the bread is golden brown, 2 to 4 minutes. Flip and continue to cook until golden brown and the cheese is melted through, 2 to 4 minutes. Cut in half and serve immediately.
