My version of Grilled Jerk Pork Chops is spicy, sweet and a little salty. I always serve them with fresh sweet and a little tangy Mango Salsa and creamy Coconut Rice. It reminds me of the Caribbean, especially Jamaica, where we got marriage. It was such as good time with close friends and family and I loved every moment of it. No stress, everyone was on their vacation and most of all, it was a great memory.
Last night, we invited our good friends, Jeff and Brandon, over for a casual dinner. It was Friday night, and 40 degree F. outside. Who grills in this kind of weather? Us! Where there’s a will, there’s a way. Thank goodness for my trooper husband, Earl, who hates the cold but agreed to help me grill (actually he did it all, I just told him “4 minutes each side, please”). Jeff and Brandon are foodies and love to cook. We had a wonderful time with them last night. Good time, delicious food and great company. It’s a win-win situation.
Let’s cook some food!
First, marinade the pork chops. For the marinade, I use Jamaican Jerk seasoning, Agave (or sugar) and Golden Mountain seasoning sauce (or light soy sauce).
Mix them together in a large zip lock bag, add pork chops and seal the bag. Make sure you get the air out as much as you can. Let them marinated for at least and hour in the fridge, or even better overnight.
Take out the Pork Chops from the fridge about an hour before grilling.
Heat up the grill (we use a gas grill), the temperature inside of the grill should be about 350 degree F. Place the Pork Chops on the grill, you know the grill is ready when you hear the sizzling sound.
Cover the grill. Grill them on medium heat until the internal temperature is 160 degree F, about 4 minutes on each side, this depends on how thick your pork chops are.
Let the Grilled Jerk Pork Chops rest on a platter covered with foil for about 5 minutes before serving, this will allow the meat to settle with its juice and your meat will be juicier. If you cut it right away when they fresh off the grill, all the juices will run out and you will end up with dry pork chops.
Serve with fresh Mango Salsa and Coconut Rice. Enjoy!
