Hey there! Someone asked me today why I haven’t posted any recipes for Mexican food. I actually love authentic Mexican food. My friends and I always go to this restaurant called Riviera’s for lunch. I think they are the best in town and as authentic as we can get in the Midwest. To pay tribute to all Mexican food lovers out there, today I’m making Shrimp Guacamole. Pros: healthy, yummy and fresh. Cons: people may complain if you don’t make enough. ha!
Let’s cook some food! Whelp, actually there’s no cooking involved. 🙂
My shortcut, I bought cooked shrimps from my local grocery store. So, all you have to do is the chopping and mixing. It is a super quick and healthy appetizer. I really hope you give it a try and please share any comments you may have in the comment section below the recipe card.
Seasoning is very important in cooking and making Shrimp Guacamole is no exception. I use salt, cayenne pepper, cumin and fresh lime juice.
Toss chopped cooked shrimps, diced tomato (cut in half and squeeze the seeds out first), avocado, chopped cilantro, minced shallots, salt, cayenne pepper, lime juice and cumin in a medium bowl. That’s it! Shrimp Guacamole is ready.
My trick to keep guacamole from turning brown is to put an avocado pit in the serving bowl. Something about the pit will keep guacamole from turning brown. It’s a good trick for pot luck day if you need to leave it out for people to snack.

Tomato Avocado Salad with Balsamic Reduction

- 4 avocados, halved, seeded and cut into small chunks
- 2 diced plum tomatoes (cut in half and squeeze the seeds out first)
- 1 tablespoon chopped cilantro
- 1 tablespoon minced shallot
- ¼ pound roughly chopped cooked shrimps (optional if you want to make basic guac)
- 1 lime, juiced
- ½ teaspoon sea salt
- 1 seeded jalapeño, finely chopped (optional)
- a dash of ground cumin
- a dash or two of hot sauce
- Toss everything together in a bowl.
- Serve with tortilla chips.
