These Almond Butter Cookies are the best I’ve ever had. They are buttery, rich, a little chewy and not too sweet. I’m so exited to share this recipe with you all. They are amazing and pretty easy. I used my Kitchen Aid Stand Mixer to mix the dough or you can use a hand mixer. I was inspired by Crumbl cookies. If you haven’t had their cookies, you are missing out or you can make some really good cookies at home. Make sure you use good ingredients, like real butter for example. I personally do not like peanut butter so I used almond butter but if you’re a peanut butter fan, go for it. Nothing can stop you. 🙂 I also put some sliced almonds on top, so people know what’s in them. Hope you give it a try!

Shortbread Cookies with Chocolate Ganache
Let’s cook some food or shall I say let’s bake some cookies!
Preheat the oven to 350°F.
Sift flour, salt and baking powder together.
Add butter, brown sugar, sugar in a stand mixer with a paddle attachment. Mix together until creamy.
Add almond butter and mix until incorporated.
Mix in an egg, vanilla extract.
Add flour slowly then beat until combined.
The dough will come together pretty quickly.
Use an ice cream scoop to scoop the dough and roll into large balls. Place them on a non-stick baking sheet or line with parchment paper or silpat. You can use a tablespoon for a smaller-sized balls.
Put sliced almonds on top and press them into each ball lightly.
Bake 12-14 minutes.
Allow to cool on baking sheet completely. The cookies will be very soft when they came out of the oven and will be firm to handle after being rest. Enjoy!
