I love fruit and dessert and any chance I get to make a simple dessert with fruit, I’m always up for it. I watch Dinner at Tiffani’s cooking show religiously. I love her and I recreate many recipes from her show. Last week, she made Baked Pears with Currants and Cinnamon for her vegan friend. I was so inspired by the simplicity of it so I decided to give it a try, and it turned out great. This is something that I will definitely make again, even on a week night.
Let’s make some dessert!
Here are the key ingredients; Anjou pears, cinnamon, sugar, white wine, dried currants and mascarpone cheese for topping. Mascarpone (pronounced mahs-car-POH-nay) is best known as an ingredient in the Italian dessert tiramisu. Besides tiramisu, it can be use in sweet and savory dishes. It’s soft, delicate and is a great paring with this the baked pear recipe.
Preheat the oven to 375 degrees F.
Peel the pears, half and core them to remove the seeds with a melon baller or a small spoon. I am using 3 pears here and cutting everything in half since it is just me and my husband tonight.
Place the pears, cut-side up, in a shallow baking dish. Add a small pat of coconut oil to each pear half.
Sprinkle with the sugar and cinnamon. Pour wine into the bottom of the baking dish, being careful not to disturb the pears. Sprinkle the currants over the pears. It’s okay if some fall into the wine.
Place in the oven and cook until fork tender, about 45-50 minutes.
To serve, set pears on a plate and dollop with mascarpone. Drizzle with some of the juices and currants from the baking pan.

- 6 firm green Anjou pears, peeled, halved and cored
- 3 tablespoons sugar
- 1 teaspoon ground cinnamon
- 3 tablespoons coconut oil, cut into 12 small pieces
- ¾ cup white wine
- ¼ to ½ cup dried currants
- 6 ounces mascarpone, for serving
