CAST IRON SAUSAGE EGG CASSEROLE

Ingredients
  • 8 eggs
  • 1 cup milk
  • ½ teaspoon seasoned salt
  • 2 cups frozen shredded hash brown potatoes
  • 1 lb. breakfast sausage
  • 1 cup (4 oz.) shredded sharp cheddar cheese
  • ½ cup diced yellow onion
  • ½ cup diced red bell pepper
Instructions
  1. Preheat the oven to 350 ºF.
  2. Brown the sausage in a large iron skillet. Set aside.
  3. In a large bowl, beat the eggs, milk and seasoned salt together.
  4. Stir the remaining ingredients into the egg mixture. Save some cheese to sprinkle on the top.
  5. Pour the egg mixture on top of the sausage.
  6. Sprinkle the remaining cheese on the top.
  7. Bake for 25-30 minutes or until the top is golden brown and a knife inserted near the center comes out clean.
