CAST IRON SAUSAGE EGG CASSEROLE
- 8 eggs
- 1 cup milk
- ½ teaspoon seasoned salt
- 2 cups frozen shredded hash brown potatoes
- 1 lb. breakfast sausage
- 1 cup (4 oz.) shredded sharp cheddar cheese
- ½ cup diced yellow onion
- ½ cup diced red bell pepper
- Preheat the oven to 350 ºF.
- Brown the sausage in a large iron skillet. Set aside.
- In a large bowl, beat the eggs, milk and seasoned salt together.
- Stir the remaining ingredients into the egg mixture. Save some cheese to sprinkle on the top.
- Pour the egg mixture on top of the sausage.
- Sprinkle the remaining cheese on the top.
- Bake for 25-30 minutes or until the top is golden brown and a knife inserted near the center comes out clean.
