ALMOND BUTTER COOKIES

Ingredients
  • 1½ cups all purpose flour
  • ¾ teaspoon baking power
  • ¼ teaspoon salt
  • 1 stick (8 tablespoons) unsalted butter, room temperature
  • ½ cup brown sugar
  • ½ cup sugar
  • 1 cup almond butter
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • Sliced almonds
Instructions
  1. Preheat the oven to 350°F.
  2. Sift flour, salt and baking powder together.
  3. Add butter, brown sugar, sugar in a stand mixer with a paddle attachment. Mix together until creamy.
  4. Add almond butter and mix until incorporated.
  5. Mix in an egg, vanilla extract.
  6. Add flour slowly then beat until combined.
  7. Use an ice cream scoop to scoop the dough and roll into large balls. Place them on a non-stick baking sheet or line with parchment paper or silpat. You can use a tablespoon for a smaller-sized balls.
  8. Put some sliced almonds on top and press them into each ball lightly.
  9. Bake 12-15 minutes
  10. Allow to cool on baking sheet completely. The cookies will be very soft when they came out of the oven and will be firm to handle after being rest. Enjoy!
Notes
You can use peanut butter instead of almond butter if you like peanuts.
