This Italian Sausage and Sun-dried Tomato Pasta is an easy weeknight dinner. After a long day at work, and small lunch, I was starving by dinner time. I needed something quick and fulfilling and if I’m lucky, I might have some left over for lunch tomorrow. My husband will be working late tonight, I bet he will be starving too, by the time he gets home. Maybe we won’t have any leftover after all.
Let’s cook some food!
Cook pasta to al dente (slightly undercooked, about 1 minute less than the package’s instructions), drain. Reserve 1/2 cup of pasta water.
Heat up olive oil and the oil from the sun-dried tomato jar in a pan, medium heat. Add chopped onion and garlic, cook for a few minutes until the onion is translucent.
Remove casing from the sausage links, break into pieces. Add to the pan, cook for 3-4 minutes.
Add sun-dried tomato, a pinch of salt and a pinch of pepper.
Add pasta and the reserved pasta water, toss everything together. Taste it, add more salt and pepper as needed.

- 18 oz. pasta of your choice (Penne or Spaghetti)
- 4 links sweet (or spicy) Italian sausage, case removed
- 4 cloves minced garlic
- 1 chopped yellow onion
- 4 tablespoons chopped sun-dried tomatoes packed in olive oil
- ½ cup pasta water
- 2 tablespoons olive oil
- 1 tablespoon of the oil from the sun-dried tomato jar
- salt and pepper, to taste
- ¼ cup fresh grated parmesan cheese
- chopped parsley for garnish
