Have you ever made a cake with just 2 ingredients? Yes, that’s right, just 2 ingredients. I’m not joking. This Nutella cake is amazing and the only 2 ingredients you need are eggs and Nutella, 8 eggs and 2 cups of Nutella to be exact. Bake it for 30-35 minutes. Then, dust it with some confectioner sugar and garnish with some fruit. I chose raspberries this time but I think strawberries would be good, too. It’s called cake but the texture is almost like pudding/mousse. And c’mon, 2 ingredients! Don’t you think it’s worth to give a try? I made this after work yesterday and brought it over to our friends, Brandon and Jeff’s house for a quiet dinner get together. It was approved! 🙂

Preheat the oven to 350°F.
The cake is very sticky, so grease a 9″ springform pan with some cooking spray, then line the bottom and the sides with parchment paper. There’s no point of making it if you can’t get it out. ha ha 🙂 Actually, it might be fun eating it out of the pan. It’s your cake after all.
Crack the eggs into the mixing bowl of a stand mixer.
Beat them with the whisk attachment. Use medium speed for 2 minutes and high for 8 minutes until the eggs triple the volume. If you use hand mixer, it may take a little longer.
Lower the speed to low and add 2 cups of Nutella little by little until incorporated. If the Nutella is hard, microwave it for 20-25 seconds.
The volume of the eggs will go down but don’t worry, that’s how it’s supposed to be.
Pour the batter into the prepared springform pan.
Bake for 30-35 minutes. Insert a knife in the middle at 30 minutes and if it comes out clean, it’s done. Do not over bake!
Let the cake cool completely before removing the springform pan and parchment paper. Don’t worry if it cracks because we will sprinkle the top with confectioner sugar.
Garnish with some raspberries or strawberries.

If you use a hand mixer, it will take a little longer to beat the egg, when the volume triple up, fold in Nutella little by little until incorporated.
