What to do if you made a huge Pot Roast for two and end up with a bunch of left over? You make Pot Roast Pasta. Yup, that’s us tonight. I made Ina Garten’s Pot Roast over the weekend and after a couple days, I am ready for something different. I love leftovers but I can only eat the same thing for maybe a day or two, definitely not a whole week. This Pot Roast Pasta is probably one of the easiest leftover recipes for a week night. It’s so easy that I’m a little embarrassed to call it a recipe. 🙂
Let’s cook some food!
If you you haven’t, you should consider making Ina’s Pot Roast. It takes a few hours, but is totally worth it. It is yummy, tender and is even better the next day.
So, back to Pot Roast Pasta. Chop your leftover Pot Roast into small bite size pieces.
Heat it up with about 2 cups of the Pot Roast sauce in a medium pan, medium-low heat. Everything has been cooked, so all you need to do is basically heat everything together.
While waiting for the meat and sauce to heat up, cook pasta of your choice until al dente, about a minute less than the package instructions.
Once the pasta is ready (I just used spaghetti), transfer it to the hot pot roast sauce pan. No need to drain it as you are going to transfer it right into the pot roast sauce pan.
Mix everything together and let it continue to cook 1-2 minutes.
Sprinkle with some chopped parsley and fresh grated Parmesan cheese and dinner is ready!
