This Prosciutto and Fig Jam Panini sounds fancy and too good to be true for a busy weekday meal, but it’s so easy and quick. In fact, I’m adding it to my weekday favorite menu list. How can you go wrong with sweet, savory and crispy grill marked panini?
I like to make an easy dish on a busy work day. However, I still want to be a little creative and eat something good, even though I don’t want to spend a lot of time in front of the stove. I have leftover raisin nut bread and cream cheese from making Turkey Cream Cheese Tea Sandwiches earlier this week. The raisin nut bread was on sale (buy 1 get 1 free) at my local grocery store. Winner, Winner, Panini Dinner!!! But then, after making the Turkey Cream Cheese Tea Sandwiches, eat them for breakfast with Lemon Curd with coffee, we still have plenty of the bread left. I’m sure everyone who loves to cook ran into this hurdle before. You buy stuff to make one thing but end up with some leftover produce, that you want to make something, but you don’t know what. Yup, that was me earlier today. Then, a light bulb went off in my head. I thought of Prosciutto and Fig Jam Panini. Well, I never made it before but how can you go wrong with this combination? I hoped my guinea pig, a.k.a. husband will love them. Otherwise, hey raisin nut bread and butter is always an option. ha ha!
Let’s cook some food!
Spread some fig jam on one side of a slice of raisin nut bread and cream cheese on the other slice. I’m making 4 sandwiches today, so I use 8 slices of bread.
Fold prosciutto slices in half and put it on one side of the bread and a handful of arugula on the other side. Close up the sandwiches.
Butter the exposed part of the bread on both sides for extra flavor.
If you have a panini press, heat it and toast them to your liking. I have this grill pan with a panini press, so I heat the pan and press on the stove for a few minutes.
When the pan is hot, put the sandwiches on.
Place the press on top.
Let them sit for a few minutes. It depends on how crispy you like, lift the press to check them out. Now, if you don’t have the grill pan like mine or panini press, you can use a non-stick pan and put another pan on top with a couple cans of soup on top to weigh it down. Then flip the sandwiches and put the pan/cans back. You won’t get the grill marks but they will still taste delish.
Once the sandwiches are done to your liking, serve warm. Enjoy!

- 8 slices raisin nut bread
- a handful of baby arugula (baby rockets)
- 4 slices prosciutto
- fig jam
- butter
- cream cheese
- Spread some fig jam on one side of a slice of raisin nut bread and cream cheese on the other slice.
- Fold prosciutto slices in half and put it on one sides of the bread and a handful of arugula on the other side. Close up the sandwiches.
- Butter the exposed part of the bread on both side for extra flavor. If you have a panini press, heat it and toast them to your liking. You can also use a grill pan with a panini press. Heat the pan and press on the stove for a few minutes.
- When the pan is hot, put the sandwiches on and place the press on top. Let them sit for a few minutes. It depends on how crispy you like, lift the press to check them out. Once they are done to your liking, serve warm. Enjoy!
