For me, I relate lavender to driving in a small European car in south of France or a trip to Bath & Body Work. Until last weekend at a girls get together party, our friend, Mikayla, brought these White Chocolate Lavender Cookies that made our patio party feel like we were in Provence. They were buttery, sweet but not overly sweet, and the light aroma of lavender definitely makes these cookies so delightful. Oui! Très bien (digging up some French from my high school almost 3 decades ago… ha!).
First thing first, order lavender buds from Amazon.com. Follow this link to their search page, lavender. Once you get there, you will want to select ‘dried lavender flowers’ and forget life before White Chocolate Lavender Cookies. They are so good with a cup of tea, coffee or wine (if you were like us that one night ha ha). These were also approved by my lovely husband, he kept going back for more until I had to tell him to save some for our neighbor, Jane. Who can resist? And let me tell you our house smelled heavenly.
Let’s cook some food! I mean let’s bake some cookies!
Preheat the oven to 375 ºF.
In a large bowl, combine flour, cornstarch, baking soda and salt. Set aside.
Add sugar and lavender into a food processor.
Process until they are combined, about 20 seconds on low.
In the bowl of a stand mixer, mix together butter, coconut oil and lavender sugar with a paddle attachment. You can also use hand mixer if you don’t have a stand mixer.
Mix until smooth, add in an egg.
Beat until combined and fluffy.
While the mixer is running on low, slowly add in the flour mixture. Beat until just combined.
Use a spatula to stir in the white chocolate chips.
Scoop the dough into medium-sized balls. I used a tablespoon ensure all my cookies are uniform. Place them two inches apart on a baking sheet(s) lined with parchment paper or silpat. This recipe makes about 24 cookies.
Bake for 12-14 minutes.
Allow to cool on baking sheet for 5 minutes.
Transfer to cool on a wire rack.
Serve with some tea, coffee or by themselves and trust me, you would want more than one. Enjoy!

I’ve tried many Lavender cookie recipes, Sugar, Shortbread, etc, but THIS is THE BEST recipe I’ve found. I added some whole lavender buds in just for looks, and rolled the cookie balls in sugar before baking, but they do not need the extra steps. They are amazing just following the recipe as it is!!! Highly recommend !!!
